It started life as a hobby, grew to a single market stall and is now a Great Taste award-winning business selling across four counties: it’s fair to say The Fudge Can is a kitchen-table success story.

Sample the goods, handmade in St Neots, and it’s not hard to see why. Striking that perfect balance between creamy and crumbly, this fudge melts in the mouth and is full of flavour - current top-sellers include Sicilian Lemon, Honey Pistachio and Cinnamon.

Credit goes, explains founder Joanne Canalella, both to quality of ingredients (all natural, they include fresh, finest cream and butter from Bedfordshire’s Blunham Dairy, British sugar and no palm oil, thickeners, sweeteners or other nasties) and a well-honed recipe and method (the dreamy texture is, for example, achieved by painstaking beating of every small batch).

“The unique recipe and method were developed after years of experimentation, failures and lots and lots of burnt saucepans,” adds Joanne, who, on a “mission to bring 'proper' crumbly handmade fudge to fellow fudge fans”, started making back in 2013.

Giving bags to friends and family for Christmas that year, the rave reviews inspired her to launch The Fudge Can in 2014, starting with a weekly charity stall in Watford town centre. By 2017, Joanne had won Great Taste stars for all four of her original flavours and moved back to her St Neots hometown.

The business has since gone from strength to strength. Bagging a coveted three-gold-star Great Taste award for her Fresh Cream Caramel Latte Fudge in 2019, Joanne now supplies farm shops and delis, sells direct via webshop and is a regular trader on markets in St Neots, St Ives, Royston, Hitchin and Ampthill.

All the fudge is gluten-free and Joanne has just added a vegan recipe to her repertoire, made using organic plant-based ‘butter’ that is also free from palm oil, dairy and soya.

The reward of running her own fudge business? “Being able to experiment with new flavours” and “providing moments of cheer for customers of all ages”.
