Born in lockdown and now a sell-out success, Cambridge's Bicycle Bakes is giving Velvet readers chance to win a box of autumn-inspired macarons
Spiced pumpkin, maple whisky, caramel apple, chai. . . Conjuring “cooler days and the return of cashmere sweaters, candles and endless cups of tea”, the new macaron collection from Bicycle Bakes is autumn on a plate.
Famous for her flawless French macarons - notoriously tricky sweet treats to perfect - Cambridge’s Gwyneth Horscroft is also known for her brownies (seriously fudgy, seriously moreish) and cookies (satisfyingly large, satisfyingly chewy), along with flapjacks, honeycombs, loaf cakes and traybakes. And, though her reputation belies it, she’s only been baking professionally since May of 2020.
When lockdown prompted Gwyneth to press pause on her dayjob in the travel industry - she’s a self-employed corporate agent - she busied herself in the kitchen. Long a keen baker, whose friends had often said she should sell her wares, she decided to try her hand at French macarons - and the results were so good, even she was impressed.
“I actually thought maybe I really could sell my baking,” recalls Gwyneth. “One large obstacle was that I didn't have a vehicle - but I did have a recent new found love of cycling. So hence Bicycle Bakes.”
Running the business from the kitchen of her one-bedroom Cambridge flat - “without a dishwasher. Who in their right mind opens a baking business without a dishwasher?” - Gwyneth started selling bakes for doorstep delivery. As word spread and demand rose, she started stocking her now-regular stall at Histon’s Smokehouse market and supplying local cafes and farm shops, too.
“The menu changes every week and in all my baking, as with my personal cooking, I like to think of myself as a seasonal cook and am inspired by whatever is fresh and in season<” she="" adds.="">”>
“I will eventually have to find a way to balance both Bicycle Bakes and Travel Counsellors together, as I've been told there will be a small riot if I close the baking business. . .”
