Opening: Tasty collab behind Hemingford cafe
Gnawtybites and Lorenzo's Coffee have come together to open The Grey House, already becoming famous for its 'jaffles'. . .
Here’s some good food news: two of our area’s best loved indies have just become one. Gnawtybites, best known for its dangerously delicious brookies (that’s brownie-topped cookies, for the uninitiated), and Lorenzo’s Coffee, famous for the unrivalled quality of its beans and brews, have united to run Hemingford Grey cafe The Grey House.
“We have had so much support: we haven’t stopped pouring coffee and baking since we opened the doors,” says Sian Richardson, the pastry chef behind Gnawtybites. “Jaffles are our ‘thing’. That’s the Aussie word for our version of a Breville toastie. Most popular so far is the cheese and baked bean one; makes a nice change from the fine dining restaurants which we’re both very much used to working in!”
Sian, formerly pastry chef at Cambridge’s Vanderlyle, launched Gnawtybites when last year’s lockdown put paid to her plans of returning to Australia, where she'd previously lived, worked and honed her baking skills.
“When I was in Melbourne, cheesecake cookie sandwiches were my obsession,” Sian explains, “but I realised quite quickly I couldn’t get those through Royal Mail! That’s when the ‘brookie’ was born: the best of both in one slice.”
Crediting Cambridge street food heroes Steak & Honour with helping her get the venture going - they loaned her space in their pro kitchen - Sian soon started supplying cafes alongside her postal bakes service.
Meanwhile, Chiarina Di Rita had founded Lorenzo’s Coffee after the birth of her son and, thanks to the popularity of her coffee, tea, hot chocolate, smoothies and shakes, realised a larger site was the natural next step. Both reluctant to go solo, when the chance to team up arose they went for it.
Adds Sian: “Over the past couple of years, a few friends of friends mentioned that maybe the both of us should do something together - and it proved to be matchmaking at it’s finest.”
