Opening: Newmarket's Waffle Hut has Stellar start
Following in the footsteps of The Bakery, the start-up Stellar Catering launched in last year's lockdown, The Waffle Hut is already a sell-out success
One of the start-up success stories of last year was The Bakery by Stellar Catering. Founded by Newmarket chef Ben Cockhill after Covid made his restaurant job redundant, pre-lockdown it was attracting early morning queues for its fresh sourdoughs, focaccia, cakes and bakes.
And now, mid-way through another national lockdown, Stellar has added a second string to its culinary bow - The Waffle Hut. Stellar HQ, in the yard of the National Horseracing Museum, is now a bakery by day and a waffle delivery service by night.
Offering both sweet and savoury options, from The Oreoooo (Oreo ice cream, doughnut and crumb with white chocolate sauce and dark chocolate shavings) to The Pig Daddy (12-hour braised barbecue pulled pork, charred corn, bacon, onions, slaw), click and collect is imminent. An eat-in Waffle Hut, where people can enjoy a cocktail, too, is the longer term plan.
“The response has quite simply been amazing: a sell-out for the first six nights since launch,” says Ben. “We have gone from three members of staff to now eight! If you had said this to us back in July we would have laughed it off. But here we are again, in lockdown, launching the second part to Stellar Catering with no regrets.”
Stellar is also running child-friendly step-by-step cooking demos online; aimed at helping homeschooling parents, they sessions are designed to expand not only lifeskills, but also English and Maths.
