Opening: Bamboo Sky brings Thai cuisine and botanical brews to Bourn

Cambridgeshire’s first ‘botanical brew house’ is coming to Bourn this summer – along with top Thai food

“Guided by nature, calm and the gentle rhythm of Eastern living”, a new-concept food and drink destination is coming to the village of Bourn. A botanical brew house by day - a first for Cambridgeshire - and a Thai restaurant by night, Bamboo Sky is set to open in mid-July.

It’s a rebrand for The Willow Tree, driven by owner Shaina Galvin’s personal passion for both Eastern flavours and philosophies. Drawing on the names of her twin daughters - known as Bo and Sky - for the brand name, Shaina says: “The goal with Bamboo Sky is to create an everyday escape in Bourn, where people can relax and meet in calming spaces, discover and enjoy fresh and exciting flavours, and find their flow in Eastern inspired experiences - all at a beautiful natural setting in the Cambridgeshire Countryside.”

Bamboo Sky will turn the party, too, adds Shaina, thanks to a vibrant menu, decor and events calendar, including live music and outdoor cinema. With a team of expert Thai chefs in the kitchen, the menu of daytime snacks and evening dishes will include both classics and modern twists, while the drinks list ranges from specialty coffees, teas and herbal blends to soft botanicals, craft beers and curated cocktails. Also in development is a light midweek lunch menu of dim sum, noodles and yum cha - a traditional afternoon-tea take on dim sum, featuring cakes and bakes.

As well as the charm-filled main building, visitors can drink and dine in the venue’s outdoor domes, tipi lounge, country garden and wild meadow. Customers can buy speciality ingredients and products to enjoy at home too, including Thai pastes and spices, house-ground coffee and, coming later in the year, botanicals.
