On the Rise: Histon's Phoenix has been reborn

By Alice Ryan

The Phoenix in Histon has been reborn - thanks to three familiar faces from the Cambridge hospitality industry. Simon Morrice, founder of King Street’s erstwhile Urbanshed, Beth Dixon of The Panton Arms, and Lawrence Dixon, her father, owner of The Champion of the Thames and The Clarendon Arms, have, says Simon, “often talked about teaming up, so when The Phoenix came on the market, we decided to go for it”.

“We combined all of our experience and knowledge in the industry to create an accessible, good quality, value-for-money multi-occasion business under one roof,” he explains. “We are nothing like any other business in the area which sets us apart from the rest.”

The breakfast and lunch menu includes Urbanshed’s much-missed sandwiches and salads - coconut satay chicken with coriander mayo; marinated artichoke with harissa hummus, beetroot and chickpeas; smoked salmon with orange and poppyseed mascarpone - while evenings bring pub classics in the bar and a more formal dining experience in the restaurant. “Sunday lunches are also proving to be a hit,” adds Simon.

“We like to call ourselves the pub with soul,” he continues, “with 60s and 70s tunes playing on the record player in the background and many reminders of the Urbanshed in the decor, including airline and bus seats and upcycled tables.”

With the mobile Shedbulance still in action for events and Urbanshed’s own-recipe coffee in the machine, “we have had many old Shedders travelling from as far as Sawston because they missed the Shed so much,” says Simon.

Keen to play a part in the community and support its economy at the same time, The Phoenix uses only local food, wine and beer suppliers, welcomes street food trucks to trade in its carpark, and hosts village events, too: a recent Macmillan coffee morning made more than £500 for the charity.

Taking part in Histon’s winter fair and firework display later this month, “we are very grateful for the support the locals have shown us so far,” Simon adds. “We have many plans for the future and hope to evolve with success.”
