This superfoods summer muesli is nutritious, incredibly quick and easy to make and doesn't contain the added sugar you'd usually get with readymade. Vibrant in colour, it packs a protein punch as well as providing plentiful healthy fats and fibre to keep you going until lunchtime!
Nuts and seeds are full of protein, healthy fats, fibre and essential minerals, the berries and kiwi are rich in the immune boosting Vitamin C and oats are a whole grain carbohydrate, which provide a slow energy release. All of these ingredients together help to balance blood sugar levels.
Ingredients (serves two):
100g oats
60g mixed nuts
40g sunflower and pumpkin seeds
Small handful goji berries (or dried cranberries)
Handful of blueberries (or other berries)
1 kiwi, chopped
100ml coconut milk (optional)
Sprinkle of cinnamon (optional)
Method:
Mix all the dry ingredients together and divide the mixture into two bowls.
If soaking overnight, add your milk of choice and leave covered overnight; if eating straight away, add your milk of choice.
Add the fresh fruit, cinnamon, if using, and enjoy!
Tip: For an extra-indulgent treat, add some coconut cream.
