Food: Top Cambridge chef gives pizza a glow up
The Pizza & Kitchen Co in Shelford gives a fine dining twist to authentic woodfired pizza. Velvet places an order
Helmed by a chef formerly of Midsummer House, Cambridge’s two Michelin star restaurant, The Pizza & Kitchen Co. is fast developing a fan following - according to one recent reviewer, it’s the city’s best-kept foodie secret.
Based at Shelford Rugby Club, the business was launched mid-way through lockdown by Ian Stuart, who’d left Midsummer House just pre-pandemic for a job with more family-friendly hours. As a result, March 2020 found him between jobs and without the safety net of furlough, “so it was time to sink or swim. . .
“A chance meeting with my now business partners, John and Simon, who had bought a pizza oven without much of a clue how to use it, and The Pizza and Kitchen Co. was born.”
Uniting Ian’s fine dining background with authentic woodfired pizza, the menu is anything but ordinary: monthly specials have included medium rare bavette steak and bone marrow nugget with peppercorn sauce, tarragon oyster mushrooms, roast tomatoes and chips, and beef brisket and pork belly chilli with bramley apple and cider vinegar salsa, maple cinder toffee and coriander.
Crediting The Pizza and Kitchen Co.’s own-recipe sauce with adding “layers of flavour that many of our competitors simply don’t have” and using only the finest, locally sourced ingredients, Ian and the team offer a takeaway service, ordered via the website, alongside eat-in at their Shelford Rugby Club HQ. Adds Ian: “Nothing beats our pizzas fresh off the stone!”
