Food: Nonna's Lab delivers a taste of Italy
Inspired by the food of his Puglian childhood, chef Roberto D'Attoma has launched a direct delivery service to bring the full Italian experience to your door
“The idea is quite simple: we want everyone to feel the way we feel when we’re sitting around the table with our Italian family having an amazing home-cooked meal.” That’s how chef Roberto D’Attoma, formerly sous chef at Cambridge’s acclaimed Parker’s Tavern restaurant, describes Nonna’s Lab, his new direct-delivery pasta enterprise.
From its Littleport HQ, Nonna’s is currently offering free delivery on orders over £20 to Ely, Cambridge and surrounding villages, with homemade pastas, sauces, breads, pates and oven-ready dishes, like traditional spinach and ricotta cannelloni, all in the webshop. There are authentic sweet treats, too - from tiramisu to cantuccini biscuits to dunk in your post-dinner coffee.
“I grew up in this amazing family in the south of Italy, Puglia to be precise, where just like in every movie about our country, everybody meets up on Sundays, cooking fabulous food all together and having lots of fun while doing it. It's probably thanks to this that I decided to become a chef,” says Roberto.
“Pasta's always been my passion, of course... how could it not have been? Long story short, I started missing my flavours and most importantly, the feelings behind them. That's when the idea of Nonna's Lab started building inside my and my wife's minds.”
With the tagline ‘from our family to yours’, “our goal is to allow every family to be part of the Italian experience,” explains Roberto. “We’re using our handed-down recipes to serve 100% the same food we used to eat in our childhood, so it couldn't be more literal than that.”
Made using a machine imported from Italy and finest quality semolina flour, the pasta is all made fresh to order and shaped with artisan bronze die cutters, which, adds Roberto, are designed to encourage sauce to coat it fully.
“We love when people contact us to say they felt like they were back in Italy, eating in front of the sea or one of our beautiful mountains,” Roberto concludes. “This is one of the most common compliments we receive - and we couldn't ask for any better reaction.”
