Cookies, cookie pies, brownies, blondies, rocky roads. . . New cake company Rach's Bakes brings it all to Ely Markets
Long a delicious destination for shoppers with sweet teeth - stalwarts include George’s Cakes and Sophie’s Afternoon Teas & Cakes - Ely Markets just got even sweeter thanks to the arrival of Rach’s Bakes, fast winning fans for its rocky roads, brownies and blondies.
Launching the business from her Beck Row home last March, just after the first lockdown began, Rachel Mayes says the stars aligned: having always loved baking, she’d just made a showstopping baby shower cake for her best friend and moved to a house with a bigger kitchen, “and finding ourselves in lockdown, I thought ‘Why not see if I can make a go of it?’. . .”
“I had always enjoyed baking with my Nana and Mum growing up, with the dream to one day start my own business,” she explains. “Before long, word was getting around, orders were coming in, and my cakes were being shared through social media.”
With her customer base expanding as far as Haverhill, her hometown, Rachel started running a stall at The Oak pub’s Saturday market, then joined the Ely rosta in June. “I loved every minute of it,” she says, “everyone was so friendly.”
Selling her signature traybakes, cookies and cookie pies on the stall, Rachel also takes cupcake and celebration cake orders, with recent themes ranging from chocolate orange to dinosaur, unicorn and Harry Potter (the latter including Hedwig and lightning bolt toppers).
